Prep time 5 minutes   I   Cook time 5 minutes   I   Serves 2

250g king prawns
1 lime, juice only
1 garlic, grated
1 tsp Cajun spice mix
1 large avocado, cut into cubes
1 mango, sliced
10 cherry toms, sliced in half
a handful of rocket
Salt and pepper

For the Cajun dressing
1 tbsp olive oil
2 tbsp mayonnaise
½ lime juiced
1 tsp Cajun spice mix

First make the dressing by mixing all the ingredients in a bowl, season and set aside. Fry prawns with garlic, lime and Cajun spice for 3 to 4 minutes until the prawns are pink and cooked through. Assemble salad in bowl, add prawns and drizzle dressing over to serve.
